White Bean Salad
Sometimes I just want something fresh. Something raw, uncooked, filled with tons of veggies, and really, really good for you. Yeah, something like that. The other day was one such occasion, and I just had to make a refreshing salad to go along with some leftover chicken we were having for dinner. This salad kicks butt. Not only is it super refreshing, but it’s also packing with protein. How ’bout that!?
I swear there are white beans down there somewhere. They’re just buried under all the vegetable freshness!
So easy to make – and so delicious!
Fresh veggie and bean goodness. I served this salad over a bed of spinach and alongside a chicken breast, but it would make a great salad all by itself.
White Bean Salad – serves 4
1 Can White Beans (or Canellini Beans), rinsed and drained
1 c Cherry or Grape Tomatoes, halved
1 Cucumber, diced
1/8 c Fresh Parsley, chopped
1/8 c Fresh Oregano, chopped
1/2 c Feta Cheese, crumbled
1 tbsp Lemon Juice
1 tbsp Olive Oil
Salt and Pepper
In a medium size bowl, combine white beans, tomatoes, cucumber, parsley, oregano, and feta cheese. In a small bowl, whisk together lemon juice, olive oil, and a pinch of salt and pepper. Pour dressing over salad ingredients and toss to combine. Serve slightly chilled.
